臟 is composed of the radical 肉 (flesh) and 藏 (hide, store). 藏 carries the meaning of concealment, and organs such as the heart, liver, spleen, lungs, and kidneys are hidden within the body cavity, all made of flesh. Thus, 臟 represents these internal organs.
